The year 2024 ended with a cumulative rainfall of 216.6 litres during the final quarter, and 2025 began with a warm, dry, and windy January, recording only 15 litres of precipitation.
February brought just 25.9 litres of rainfall, and the onset of spring led to an accumulation of 70 litres during March. In April, barely 13.2 litres were recorded.
May and June followed the same trend, with lower accumulations compared to other areas of the island. May closed with 21.4 litres and mild temperatures, giving way to a warm and dry June. This marked the prelude to a summer characterised by intermittent heatwave episodes.
The harvest began on 11 August, and during the third week of harvesting, 15 litres of rainfall refreshed the vineyards of Felanitx, while 11.8 litres cleared the dust from those in Porreres. It concluded on 9 September, a warm month with light rainfall, which watered the already harvested vineyards with a total of 26 litres.
Vinification
2/3 destalked and 1/3 without destalking. Fermented at 25º with autochthonous yeasts, pumping over every two days. Malolactic fermentation in vat.

A spring of moderate rainfall followed and we closed the season with an unprecedented and localized episode of rain that accumulated 204 liters accompanied by hail. In two days the equivalent of 40% of the annual rainfall was accumulated. Felanitx vineyards did not receive as much water.
The statistics speak of an even warmer year than in 2022, but the perception is that in 2023 the heat arrived later than the previous year. The truth is that the summer months were extremely hot. July was a month of many tropical nights and two heat waves were recorded. In August in Porreres we had 8 days with temperatures over 36 degrees, when the normal is 2 and September was a hot month. The end of summer and autumn have not been generous in terms of rainfall or low temperatures and the green plant covers planted during October and November have hardly grown at all.
Type of ageing
A French oak vat of 5,000 litres for the Syrah and Callet and French oak casks of 225 litres for the Cabernet Sauvignon.
Vinification
Separate fermentation of the different types of grapes and post-fermentation maceration according to the varieties. Once the musts were drawn off, malolactic fermentation was carried out in a stainless steel tank and then the wines were blended for ageing.

I will always remember this 2022. lt may have been the hottest year since I began winemaking in 2004. lf late 2027 saw a wet November, the early months of 2022 had very I ittle rain. This tendency lasted throughout the year in Porreres and was interrupted by an episode of heavy rainfall in Felanitx just after the harvest.

Vinification
Separate fermentation of the different types of grapes and post-fermentation maceration according to the varieties. Once the musts were drawn off, malolactic fermentation was carried out in a stainless steel tank and then the wines were blended for ageing.
